Ingredients:
- 6 Russet Potatoes
- 2 sticks of butter or margarine
- 1/2 cup Sour Cream
- Your favorite blended cheese, I use Costco Mexican Style Blend
- 1 (3oz.) Hormel Real Bacon Bits or fry 6 strips of bacon
- 1/2 cup of Soy Milk
- EVOO
- Kosher Salt
- Chopped chives
Directions:
- Scrub and rinse potatoes
- Pierce potatoes with a fork a few times on each side
- Preheat oven to 400
- Place a large piece of foil on a baking sheet, rub EVOO all over potatoes
- Sprinkle each potato with kosher salt on both sides.
- Bake in the oven for 1 hour and 15 minutes on 400
- Remove potatoes from oven, cut them in half and remove inside of potatoes completely
- In a large bowl, add potatoes without skin, 1-2 sticks of butter, 1/2 cup of sour cream, and 1/2 cup of milk (I used soy milk)
- Use a mixer to blend until creamy
- Load the potato skins with the creamy potatoes and add bacon bits and cheese on top
- Put potatoes back in the oven on 350 for 30 minutes or until skins are crispy and cheese is melted
- Top with chives, salt, and pepper
- If you don't want to do Twice Baked potatoes, just bake the potatoes in the oven on 400 for 1.5 hours or until crispy.
