My mom's famous spicy meatloaf recipe that I adore!
Ingredients:
- 1 sleeve of ground beef = 3 lbs.
- 2 eggs
- 1 large bottle of your favorite BBQ Sauce (we use Lucille’s

- 1 tbsp. of liquid smoke
- 1 sleeve of saltine crackers original or RITZ Crackers
- 1 pie pan or 8x10 rectangle pan lined with foil

Directions:
- 1-2 days prior, mix together the ground beef, eggs, liquid smoke, and ¾ of BBQ sauce (save the remaining ¼ for topping). Refrigerate until ready to bake.
- Crumble the sleeve of crackers before opening the package with your fingers until fully mashed.
- Dump the sleeve of crumbled crackers into the meatloaf bowl and mix all together.
- Mold the meatloaf into a half round in the pie pan.
- Bake on 350 for 1 hour covered with foil (keep an eye out, all ovens are different).
- Remove meatloaf and drain off the oil. Leave off foil.
- Continue to bake for an additional 20 minutes.
- Turn oven to Broil and spread the remaining BBQ sauce on the top of the meatloaf. Broil it until the BBQ sauce gets crispy (about 5-10 minutes).
- Remove meatloaf and drain access grease.
- Serve with your favorite mashed potatoes, gravy, and rolls/butter. We used Hawaiian rolls and toasted them when the meatloaf was on broil.
- Perfect for a cold winter night. The leftovers are delicious on a sandwich or just reheated.
Ingredients for mashed potatoes:
- 5 pound bag of potatoes. We used Russet.
- 1 stick of butter
- ¼ cup of mayonnaise
- ½ cup of milk
- Your favorite garlic seasoning
- 1 jar of Turkey gravy (Boston Market has the best)
- Salt & Pepper
Directions:
- Boil a pot of water with a few sprinkles of salt
- Remove half the skin from each potato and cut into cubes
- Place potatoes in the boiling water until soft
- Heat the jar of gravy in a separate pan
- Drain all the water
- Add butter, mayonnaise, and milk to the potatoes and mash until creamy
- Add garlic powder, salt and pepper to your liking. Sprinkle paprika and parsley for prettiness.
