Quick & Easy Red Velvet Cupcakes






Ingredients:

For Cupcake mix:
  • 1 pkg Duncan Hines® Moist Deluxe® Red Velvet Cake Mix (Got this on sale for $1.25)

  • 3 eggs

  • 1/3 cup of Vegetable oil

  • 1/4 cup of water


  • For Cream Cheese Frosting:

  • 1/2 cup butter, softened

  • 8 oz. cream cheese, softened

  • 3 cups of confectioners' sugar (powdered sugar)

  • 1 tsp of vanilla extract

  • Fresh coconut, shaved and toasted for garnish (optional) Toast on 350 for 7-10 minutes until crispy

  • Piping bag for decorating the cupcakes


  • Directions:
    1. Preheat oven to 350°F. Line with paper baking cups.
    2. Prepare batter according to package directions.
    3. Spoon batter into lined muffin cups, about 1/2 full.
    4. In small bowl, combine cream cheese, sugar vanilla and egg; mix until smooth.
    5. Bake 20 minutes or until toothpick inserted in center comes out clean. Cool cupcakes on a towel.
    6. For frosting: in a large bowl beat together butter, cream cheese, powdered sugar, and vanilla until creamy.
    7. Spread cupcakes with frosting using a spatula or use a piping bag to make them look beautiful.
    8. Toast coconut and sprinkle on each cupcake.
    One day I will attempt my own red velvet from scratch, just ran short on time and didn't want to buy cupcakes made by the supermarket. I love how my cream cheese frosting tastes.
