Ingredients
· La Tortilla Factory Smart & Delicious Whole Wheat Large tortillas or any Wheat tortilla (these are 80 calories each)
· Mozzarella Cheese – shredded
· Parmesan Cheese – shredded
· Culinary Circle Spicy Italian Sausage Pasta Sauce (Albertson’s) or any red pasta sauce
· Your favorite veggies
Directions:
· Put a piece of foil on top of a baking pan
· Heat oven to 350 degrees
· Dice up all your veggies (I used tomatoes, bell pepper, garlic, mushroom, and onion
· Add your veggies to a skillet and pour in a little EVOO. Cook on medium heat until done (5 minutes)
· Lay 1 tortilla or 2 on the foil
· Spread ½ cup of pasta sauce over the tortilla
· Add your cooked veggies over the sauce
· Spread ¼ cup of mozzarella cheese over veggies
· Spread 1-2 tablespoons of parmesan cheese over mozzarella
· Bake in the oven for 15 minutes. For a crispier tortilla, broil for a remaining 5 minutes
· Let it cool for about 2 minutes before slicing into it. Serve with crushed peppers
