Easter Bunny Cupcakes
















Little tip adds squirly grass and large tip add tall grass




Ingredients:

1 box of Pillsbury Funfetti Cake Mix – 18.9oz. ($1.99)

1 tub of Cream Cream Cheese Frosting at Albertson’s – 16oz. ($1.99) or make your own buttercream frosting

Leaf Green Food Gel – I use Ameri Color
1 box of PEEPS yellow bunny marshmallows (12 in a box)
1 box of PEEPS pink or blue bunny marshmallows (12 in a box)
1 bag of Reese’s peanut butter pastel eggs – 12oz. bag
1 container of Reynolds Baking cups in pastel colors (36 in a container) or any brand
24 toothpicks
1 icing tip - #233 decorating tip by Wilton, you can find at Jo-Ann’s or your local cake store any brand
1 piping bag or Ziploc for frosting

Directions:
Pre-heat oven to 350
Blend Funfetti cake mix with ingredients. Pillsbury calls for vegetable oil, water and eggs
Place cupcake cups in cupcake pan and fill each cup 2/3 full. The funfetti mix will make 24 cupcakes
Put icing in a bowl and add food coloring gels. Blend until it’s all green
Add icing to piping bag and place in fridge until cupcakes are baked and completely cool
Pull cupcakes out of the oven and immediately pull them out of the pan and set on the counter to cool
You can go to Wilton’s website to learn how to property make the grass or just practice on a plate. You can use a small tip or large 225. Images above. The large one helps the grass stand up straighter.
Stick a toothpick through the center-bottom of each PEEP and place in the center of each cupcake
Add 3 eggs, different colors to the cupcake
