Mini Lemon Pies









Ingredients:


Crust:
2 cups sifted flour
1/2 cup powdered sugar
1 cup of butter softened


Filling:


4 eggs
2 cups granulated sugar
1/3 cup of lemon juice - Need about 2 large lemons for juice
1/2 tsp. lemon rind
1/4 cup of flour
1/2 tsp baking powder


Directions:


Crust - Mix flour and sugar together, cut in butter until mixture clings together. I use my hands.


Press into 9x13 pan or mini porcelain ramekins, and bake at 350 degrees for 20 to 25 minutes or until crust is barely brown.


While crust is baking, mix the following: beat eggs, granulated sugar, lemon juice, and lemon rind. Add flour and baking powder, mix well. Pour this over baked crust and return to the oven and bake for 25 minutes or until firm when touched.


While still warm, dust with powdered sugar.


*** When cool, cut into thin bite sized squares and share with everyone. These are a huge hit even for people who don't like lemon. Like my husband. He hates fruit but craves these all the time!

If you make Mini Lemon Pies You can also do them in porcelain ramekins the exact same way as the lemon bars. Just less time in the oven. Keep your eye on these. You can add whipped cream or vanilla ice cream to them.
