You can buy your favorite boxed pancake mix or make your batter from scratch. Fiber One pancake mix is very light and not as sweet as homemade batter. For 6-8 pancakes you use one cup of Fiber One mix and 2/3 cup of water for your batter.
Below is a very special pancake mix recipe from my Aunt Connie. It’s fabulous!
Ingredients:
1¼ cup Flour
3 tsp. baking powder
½ tsp. salt
2 Tbsp. sugar
1 egg
2 tsp. vegetable oil
1 cup of milk
½ tsp. vanilla
Directions:
Whisk dry ingredients in one bowl and add wet ingredients in another bowl.
Slowly whisk the wet into the dry bowl until the lumps are gone.
Heat a flat griddle skillet and add a little vegetable oil to the pan. If you sprinkle the pan with water and it sizzles, then you know it’s ready.
Spoon a heaping spoonful of pancake batter onto the griddle, you should be able to fit 4 small circles of pancakes each round. The Fiber one pancakes will bubble, keep an eye on them.
Once browned on the bottom, flip them over.
Add a little butter to the top of each pancake.
Put the cooked pancakes on a plate, add your favorite syrup (we use 100% maple) and a little powdered sugar.
