Contadina Italian Insalate (Salad)




Story: 
While dining at Naples Ristorante e Pizzeria at Downtown Disney in Anaheim, I tasted one of the best salads I’ve had in a very long time. Under Insalate on their menu, you will find the Contadina salad that includes chopped romaine and radicchio, chopped red onion, tomato, pepperoncini, green olives, kalamata olives, garbanzo beans, salami, provolone, and Italian vinaigrette. After work I drove straight to Trader Joe’s and picked up all the ingredients to make it myself at home for dinner.

Ingredients were all purchased at Trader Joe’s:

1 jar Kalamata Olives, pitted in olive oil. Use 1/3 cup

1 can green olives, pitted. Use 1/3 cup

1 can Organic garbanzo beans with sea salt. Use 1/3 cup

Citterio Salumi Pronti mini sampler, 3 oz of Genoa Salami and Provolone cheese

1 bag of Butter lettuce with Radicchio, 7 oz. by Les Salades du Midi or buy romaine and radicchio individually and chop

Red onion, 1/3 cup finely chopped

1 mini cucumber, finely chopped

1 jar pepperoncini, use 3 pepperoncini’s finely chopped

1 Roma Tomato, finely chopped

Extra Virgin Olive oil and Red Wine Vinegar or your favorite Italian Vinaigrette, to taste

Sea Salt & 4 color peppercorn grinded, to taste

Directions:

Chopped the lettuce/radicchio into little pieces and place in a large bowl

Finely chop salami, provolone, red onion, cucumber, pepperoncini, and tomato and add to the bowl

Drain juice and oil from olives and garbanzo beans and add desired amount to the bowl

With your hands toss the salad until well mixed

You can add the dressing directly into the bowl and toss again or divide into bowls and let your guests dress their own salad

Top your salad with seat salt and ground peppercorns

Perfect Italian Salad full of goodness!
