Starbuck's Spinach Feta Egg White Wheat Wrap


















A wheat wrap filled with cage-free egg white, spinach, feta cheese and tomatoes:

Some people think a hearty breakfast can’t be complete without a strip of bacon, slice of ham or some other meaty fixing. Well, this vegetarian wrap begs to differ. Sure the spinach and tomatoes keep things healthy. But it’s also packed with the tasty protein of egg white and feta cheese. A savory and satisfying way to start your day.
My co-worker Tracy and I were working in the Wailea area of Maui. We always order the spinach feta breakfast wraps from Starbuck’s. On this visit we were staying in a condo with our own kitchen so she asked me if I could recreate the wrap for us with my own flare. We headed to Safeway and I stocked up on all the common ingredients. Here are some approaches throughout the week and making a different version each day.
Ingredients to make 2:
6 eggs (only use the egg whites) save the yolk to cook for your puppies!
3 cups of spinach
2 Garlic cloves
1/3 cup diced red onions
Red salsa – we used Wholly Salsa, roasted tomato
La Tortilla Factory Low Carb High Fiber Whole Wheat Tortillas (small or large)
Feta Cheese
Salt & Pepper to taste
Butter or Olive Oil
Cooking Spray
Optional: Sun-dried tomatoes and homemade guacamole (recipe below)
Directions:
In one large pan, add garlic and onions and drizzle a little olive oil or 1 teaspoon of butter. Cook on medium until soft. Add in 3 cups of spinach filling the pan. This will shrink so pile it in.
Once the shrimp is completely wilted, add in 1-2 tablespoons of salsa, salt and pepper. Once combined; turn off the heat.
In another pan spray with cooking spray and cook on medium until it all turns white. Keep an eye on it so it doesn’t overcook. Flip once or you can even scramble them if you would like.
One way to make these is to bake them. Lay one tortilla down, scoop some spinach concoction onto the tortilla, sprinkle some feta, and add some egg white on the very top. Bake on 350 for 5-10 minutes until the edges get crispy.
Another way is like a quesadilla or pizza. Lightly butter one side of two tortillas. Lay the butter side of one tortilla in a pan on medium heat. Fork some spinach concoction onto the tortilla, sprinkle some feta cheese, and lay your cooked egg whites directly on top. Followed by the other tortilla, butter side up. Heat and flip to get both sides browned.

  1. These "Starbucks" spinach feta wraps are an amazing snack. I was mistakenly given one of these one time when I was ordering a breakfast sandwich at SB and I'm glad I was. Soon I too was making my own at home using a similar process. I also add a few hot banana peppers for some "zing." I love finishing them off in the toaster oven to give the tortilla some crunch.
