Zucchini Pizza










My mother in law’s close friend Cheryl gave me some of her home grown zucchini. It was huge. I used one of them and grilled it and the other one I came up with the idea to make little pizzas minus the dough.

Ingredients:
One large zucchini – the largest you can find
Pasta sauce, marinara or pesto
Pepperoni, optional
Cheese, optional
Red pepper flakes, optional for spiciness
Seasoning, I use ZAATAR Rub:

Directions:
Pre-heat oven or toaster oven at 400 degrees
Wash and cut zucchini into rounds. Mine were about 1.5 inches in height.
Smear your sauce on top of each zucchini. I did some with tomato sauce and some with Classico brand pesto sauce.
Sprinkle some seasoning on top of the sauce and red pepper flakes.
Top with pepperoni or spicy salami. We buy ours from Claro’s Italian Deli in Upland.
Top with your favorite cheeses, mozzarella, parmesan or lactose-free mozzarella from Trader Joe’s.
Lightly sprinkle additional seasoning to make it look pretty.
Line a baking sheet with foil and put the zucchini pizzas on the foil.
Bake for 25-30 minutes. If you want your cheese a little crispier, broil the pizzas for 3-5 minutes keeping an eye on it.
