Swai fish is not the easiest fish to find. The first time I tried it was at The Heights in Upland but they only get it in once per year. I ran into this fish in the frozen section at Trader Joe's last week. One bag of 3 really good sized Swai was $4.99. I bought it and figured if I didn't like it then I wouldn't purchase it again. I thawed two pieces and used this recipe. It was outstanding. I will be making this again and continuing to keep the frozen Swai stocked in my freezer. If you haven't had Swai, it is not overly fishy. Compare to halibut flavor but not as dense.
Ingredients:
2 pieces of thawed Swai fish, roughly 4 oz. each
1/4 cup of honey
3 tablespoons of mayonnaise
2 tablespoons of whole grain Dijon mustard
1 tablespoon of fresh squeezed lemon juice
Optional: cooking spray, salt and pepper
Directions:
Turn on your oven to 425 degrees
In a medium sized bowl mix together honey, mayonnaise, mustard, and lemon juice
Lay out a large piece of foil and spray with cooking spray
Sprinkle both sides of thawed Swai fish with a little salt and pepper
Lay the Swai fish down on the foil and pour the entire bowl of honey mixture on top of the fish
Pull the sides of the foil together crimping it closed, so there are no holes anywhere
Bake on 425 for 20 minute or until the fish is completely white looking
Save the cooked honey mixture to drizzle on top of the fish
I made one plate with homemade mashed potatoes for my husband, with a piece of fish and drizzled some of the honey sauce over the top. I made a plate for myself of shredded Brussel sprouts and warm cabbage, top with the fish and drizzle some extra honey mixture on top. DELIGHTFUL!
