Garlic Parmesan Chicken





Ingredients:

2 tablespoons extra virgin olive oil

2 clove garlic, minced

1 cup dry bread crumbs

2/3 cup grated Parmesan cheese

1 teaspoon of dried basil leaves or dried oregano

¼ teaspoon ground black pepper

1/4 teaspoon kosher salt

2 skinless, boneless chicken breasts

Directions:

Preheat oven to 350 degrees F. Lightly spray baking dish with cooking spray.

In one bowl, blend the garlic and olive oil. In another bowl combine the bread crumbs, Parmesan cheese, basil or oregano, salt, and pepper.

Dip each chicken breast in the oil mixture on both sides, then dip the chicken in the bread crumb mixture.

Arrange the coated breasts in the baking dish, and top with remaining bread crumb mixture if there’s any left.

Bake the chicken for 30 minutes and then broil the chicken for another 10 minutes. Total time in the oven should be between 40-45 minutes. You want the outside to be a little crispy and the inside to be moist.

Serve with your favorite pasta dish such as Shrimp Scampi:
