I found this Strawberry Balsamic Vinegar at Home Goods years
ago. It is made by Sonoma Harvest. I drizzle it on my salads. It is just
wonderful. I’ve tried to find it locally and can’t. I know I can purchase it
online for $15 plus shipping, but I got the idea to try and create my own
homemade strawberry salad dressing. I’m very pleased with this and look forward
to making a lot more of it.
Ingredients:
4 cups fresh strawberries
2 tsp. Pure cane sugar or regular sugar
¼ tsp. sea salt
1 Tbsp. Olive oil
1 Tbsp. lemon juice
1 Tbsp. apple cider vinegar
2 Tbsp. 25 year aged balsamic vinegar, I used B.R. Cohn
½ tsp. ground black pepper
1 Tbsp. poppy seeds
Directions:
Clean and rinse strawberries. Remove the stems and cut the
strawberries in half
In a small-medium pot, combine strawberries, sugar, and salt
Heat over medium heat for about 5-7 minutes until
strawberries begin to soften and you see the juice
Transfer everything in the pot to a food processor and blend
and pulse until smooth
Slowly add in the olive oil, lemon juice, apple cider
vinegar, and balsamic blending and pulsing until smooth
Add in your final ingredients of balsamic vinegar, black
pepper, and poppy seeds with a final blend
Use a spoon and taste the dressing by itself. Your call if
you would like to add additional salt, pepper, sugar, olive oil or more
balsamic
Store dressing in an airtight container in the refrigerator
for up to 2 weeks
Serve on top of your favorite lettuce and be creative with the
toppings – you can do fresh slices of fruit, feta cheese, baked walnuts, and so
many other things to make a perfect salad
