Cottage Cheese Fruit Salad










I tried this fruit salad years ago at a friend’s on Thanksgiving. It paired perfectly next to the turkey and ham. When you eat it by itself it is very sweet but oh so yummy. Next to meat dishes it is a perfect balance. Having a little dessert with your dinner is wonderful. You just can’t go wrong with this side dish. Perfect for pot lucks and beyond easy to make. Only 4 ingredients.

* Make sure you give yourself the 5 minutes to mix everything together as well as the 3 hour refrigeration time. That is important as you want the correct thick consistency prior to serving.

INGREDIENTS:

1 (16 ounce) containers small curd cottage cheese

1 (3 ounce) boxes Jell-O gelatin, any flavor (strawberry or raspberry suggested)

1 (8 ounce) containers Cool Whip or generic Original Whipped Topping

1 (15.25 ounce) cans fruit cocktail or 1 (15 ounce) cans any fruit, drained

1/2 cup walnuts or 1/2 cup pecans, chopped (optional)

DIRECTIONS:

Mix together cottage cheese and dry Jell-O.

Add the Cool Whip and mix thoroughly.

Add fruit cocktail and nuts (if desired) and mix.


Chill for at least 3 hours before serving.
