Rice & Tuna

If I had to choose one last meal; it would be my famous Rice & Tuna. I started making this in high school. It's cheap, easy to make, and delicious! Thank you to the Martinez family who taught me this delicious concoction.




Ingredients:

1 can of Chicken of the Sea tuna in water (refrigerate overnight)
1/2 can of peas or defrosted frozen peas
1 cup of white rice
1/2 tsp. extra virgin olive oil
1/2 tsp. salt
1 tsp. of butter

Preparation: 25 minutes

1. Drain water from tuna (I pour the tuna juice over the dogs food), shred the tuna with a fork, and set can in the fridge while the rice is cooking.

2. I use a rice cookers. Add one cup of white rice, two cups of water, 1/2 tsp. of extra virgin olive oil, and 1 tsp. of salt. Click on cook. Takes about 20 minutes.

3. Heat peas in a pan until hot.

4. Place cooked rice in a bowl, mix in butter, add the tuna, peas, and then salt and pepper. Enjoy with a spoon or chopsticks.
