Breakfast Burrito













 





 

Legend's Burger inspired me to make my first Breakfast burrito.

Ingredients to feed 4 people:

1 pack of frozen hash browns from Trader Joe's or ANY hash browns you prefer. They also have the shredded frozen hash browns

1 package of flour burrito tortillas

1 package of cheese - your favorite!

8 eggs

PAM cooking spray

Carne Asada - El Terasco AUTHENTIC - 8161 Foothill Blvd - Rancho Cucamonga, CA 91730 - (909) 608-1990. They also make an amazing guacamole sauce

Salsa - your favorite!

Directions:

Have an amazing TACO Feast one night and use the leftover carne asada for breakfast burritos or bacon or ham

Dice the carne asada into little chucks

Spray pan with PAM and turn heat to medium

Crack and drop 8 eggs (basically 2 per person)

Cook until egg yolk turns white

Once egg yolk is white you can cut a triangle around each egg and flip

Add salt and pepper

Once eggs are cooked you can dice up eggs with spatula and heat meat in microwave for 45 seconds

Turn range to low, and add carne asada to eggs and combine

Place tortillas on stove. Medium heat and cook until warm. You can also spray your pan with PAM, add a little grated cheese and lay the tortilla on top of the cheese. Heat until a little crispy.

Scoop eggs/meat onto tortilla, toss a little cheese on top, and fold into burrito

Top with cheese and microwave for 1 minute if you want to fully melt the cheese.

Serve with your favorite salsa or guacamole OR Gringo Bandito!
