Grandma's Zucchini Horderves









Ingredients:
5 cups zucchini (slice very thin), no juice
½ cup onion, chopped
Sauté zucchini and onion in a pan until soft
1 cup Bisquick
½ cup parmesan cheese
½ teaspoon salt
½ teaspoon garlic powder or fresh garlic
½ teaspoon of dried oregano
½ cup vegetable oil
4 eggs
Optional: pepper

Directions:
Sauté zucchini and onions in a pan until soft.
In a large bowl beat eggs, add in salt, oregano, and oil. Slowly add in onion, cheese, and bisquick.
Lastly, add in the zucchini and onion.
Grease a 9x13 pan with oil or Crisco.
Spread the ingredients in the pan and bake on 350 degrees for 35 minutes or until golden brown. This can take up to one hour depending on your oven.
You can cover with cheese if you want to.
Serve cold or warm and cut in 1x2 squares.
