Bell Pepper Eggs










Ingredients:

Any color bell peppers - I used yellow and red
2 eggs
PAM
Salt & Pepper

Directions:

Cut the tops off the bell peppers and slice thin slices from each bell pepper to create perfect circles.

Bake bell peppers on 350 for 10 minutes.

In a pan, spray PAM and lay bell peppers in the pan. Crack 1 egg inside each bell pepper.

When egg is all white on one side, flip it over. Cook an additional 2-3 minutes on the uncooked side if you want over-easy. If you want over-medium to over-hard stab the yolk with a knife.

Sprinkle eggs with salt and pepper and serve with a knife and fork. You can also toast an english muffin and eat the eggs in between the muffin.
