Muffin or Loaf Ingredients:
5 tablespoons butter, melted
2 cups All Purpose flour
1/4 cup sugar
1/2 teaspoon salt
3 teaspoons baking powder
1 egg
1 cup milk, plus more if needed
2 cups All Purpose flour
1/4 cup sugar
1/2 teaspoon salt
3 teaspoons baking powder
1 egg
1 cup milk, plus more if needed
Topping Ingredients:
1/2 cup brown sugar
1 teaspoon cinnamon
1 cup chopped walnuts, pecans or cashews (optional)
Directions:
1/2 cup brown sugar
1 teaspoon cinnamon
1 cup chopped walnuts, pecans or cashews (optional)
Directions:
Preheat oven to 400 degrees. Line muffin tins with paper liners. In a small bowl, mix topping ingredients together. Set aside.
In another bowl, mix together flour, sugar, salt, and baking powder. In a third bowl, mix milk, egg and 3 tablespoons melted butter together. Combine the dry and wet bowls and mix together.
Add in half of the brown sugar/nut mixture. Batter should be lumpy, not smooth, and thick but very moist. Add more milk if needed to achieve this consistency. Stir in remaining 2 tbsp melted butter and cut through with a knife to swirl.
Spoon batter into muffin tins, filling them about 2/3 of the way. If you would rather use a loaf pan, grease a 9x5x3-inch loaf pan. Sprinkle remaining brown sugar/nut mixture on top.
