Salted-Baked Potatoes

I got this idea from Outback Steakhouse. They have the best salted-baked potatoes!

You can do this two ways: Coated with egg whites or Olive Oil

Ingredients:
4 Russet (baking) potatoes
1 egg white, lightly beaten or Extra Virgin Olive Oil
1/2 cup kosher salt

Directions:
Clean and scrub potatoes
Preheat oven to 425°F.
Prick potatoes in several places with a fork or knife.
Coat each potato with egg white OR Olive Oil, then crust potatoes completely in salt.
Bake potatoes in a shallow baking pan until tender when pierced with a sharp knife, about 1 hour. You can cook longer if you like crispy skin. I DO!

Create a potato bar so guests can select their favorite toppings:
Shredded cheese or Cheese-Whiz, sour cream, butter, chives, bacon bits, and pepper

You will want to slice your potato open and add the cheese first so it melts underneath the butter and sour cream.
